Lily Fields Distilling Co. was founded by Jennifer and Shannon Hunt, two Lilyfield locals with different backgrounds and one shared goal: to create spirits that feel premium, original and worth seeking out.

Jen brings a background in chemistry and a meticulous approach to formulation, flavour balance and production. Shannon brings experience across design, hospitality spaces and horticulture, helping shape both the brand and the world around it.

Together, we make award-winning spirits grounded in precision, originality and a distinctly local Sydney identity.
