Lily Fields Distilling Co. is a Sydney Gin Distillery founded in late 2022 by 1 Scientist & 1 Creative (Jen & Shannon Hunt)

Born out of a love for quality spirits and also as passionate foodies the team decided to take the plunge and change careers into the wonderful world of Australian Craft spirits.

Lily Fields Distilling Co initially launched with one product: Sydney Dry Gin, which was the result of endless Research & Development and copious amounts of Gin Tasting. 

​

The target was always perfection, and the product development didn't stop until the team had what they believed was to be one of the Best Australian Gin's. A beautifully balanced, bright and crisp Gin with a backbone of Juniper and citrus notes of Ruby Grapefruit. 

​

This is a true Sydney Dry Gin, made using a locally grown wild pepper tree, with Citrus sourced from the locally run Orange Grove markets.

They then launched Juniper Dry Gin, a completely new recipe and method of production. The target was a true London Dry Gin, with the focus on a bold and balanced Juniper profile complemented by subtle citrus flavours of Australian Finger Lime and Ruby Red Grapefruit.

​

In a true testament to the team, Juniper Dry Gin was awarded one of the highest and most prestigious awards in the world of Australian Gin's. The TROPHY, Best in Class, Best Australian Gin, Best London Dry Gin in the 2023 Australian Gin Awards.

This was in addition to two GOLD's in both the 2023 Australian Gin Awards and 2023 Melbourne Royal Australian Distilled Spirits Awards
